I have the same Seaward water heater. When I painted mine I took it one step further and upgraded the thermostat.

I removed the fixed temperature clixon thermostat and installed and adjustable thermostat. That allowed me to set it at a much lower temp. I also renewed the thermal grease which is important in keeping the temparature of the water heater from running away. There is a safety cutoff thermostat (top) shown in the picture. But being able to set at a lower temp gives me peace of mind and also prevents blown out hoses.

I also replaced the plastic drain valve which was dry rotted.

I noticed the thermal grease also and renewed it.  What hoses/tubes are you suing to carry the potable hot water? Also, what hoses do you use to bring the engine coolant to the heater?

Thanks
